The key to this dish lies in selecting the right ingredients — fresh, crisp apples and good-quality spices really lift the flavors. I always pick apples that are firm yet juicy, like Granny Smith or Honeycrisp, because they hold up beautifully during baking without turning mushy. For the cinnamon, I prefer freshly ground or high-quality ground cinnamon to get that rich, aromatic kick. Keeping your butter and eggs at room temperature also helps the batter come together smoothly, resulting in a tender crumb that feels like a little slice of homemade love.
- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 1 cup granulated sugar
- 2 large eggs, room temperature
- ½ cup unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
- 1 cup sour cream or plain Greek yogurt (for moisture and tang)
- 2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work best)
- Optional: ½ cup chopped walnuts or pecans for added crunch
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
- In a large bowl, beat the sugar and eggs together until light and creamy — this usually takes about 3 minutes with a hand mixer.
- Slowly add the melted butter and vanilla extract to the egg mixture, mixing until fully combined.
- Fold in the sour cream or Greek yogurt, which adds moisture and gives the bread a lovely, tender texture.
- Gradually add the dry ingredients to the wet ingredients, folding gently until just combined. Overmixing can make the bread tough.
- Gently fold in the diced apples (and nuts if using), distributing them evenly throughout the batter.
- Pour the batter into your prepared loaf pan and smooth the top with a spatula.
- Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean. The bread should be golden brown on top and spring back when lightly pressed.
- Allow the bread to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely. This helps it set nicely and makes slicing easier.
