- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup unsalted butter, softened
- 3 cups peeled and sliced apples (Granny Smith or Honeycrisp work well)
- 1/3 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup rolled oats
- 1/4 cup chopped pecans (optional)
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13 inch baking dish with parchment paper.
- In a medium bowl, combine flour, granulated sugar, and a pinch of salt. Add softened butter and vanilla extract, mixing until a crumbly dough forms.
- Press the dough evenly into the prepared baking dish to form the shortbread layer. Bake for 15 minutes until slightly golden.
- While the shortbread is baking, toss the sliced apples with brown sugar, cinnamon, and nutmeg in a large bowl.
- In another bowl, combine oats, pecans (if using), and a bit more butter to make the crumble topping.
- Remove the shortbread from the oven and layer the spiced apples over it, followed by the oat crumble.
- Bake for another 25-30 minutes until the topping is golden and the apples are tender.
- Allow to cool before slicing into bars. Serve and enjoy!
