- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups diced apples (preferably Granny Smith)
- 1 cup chopped pecans
- For the glaze: 1 cup packed brown sugar, 1/2 cup heavy cream, 4 tablespoons butter, 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, mix together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together the eggs, oil, and vanilla. Pour the wet ingredients into the dry mixture and stir until just combined.
- Fold in the diced apples and chopped pecans until evenly distributed.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, make the glaze by combining the brown sugar, heavy cream, and butter in a saucepan. Bring to a boil over medium heat, stirring constantly. Boil for 2 minutes, then remove from heat and stir in the vanilla.
- Once the cake is done, let it cool slightly before pouring the warm caramel glaze over the top.
- Allow the glaze to set before slicing and serving.
