  • 1 cup unsalted butter, cold and cubed

  • 2 medium Granny Smith apples, peeled, cored, and finely chopped
  • ½ cup brown sugar

  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, mix the chopped apples with lemon juice, brown sugar, cinnamon, nutmeg, and cornstarch. Set aside to let the flavors meld while you prepare the dough.
  3. In a large mixing bowl, combine the flour, sugar, and pinch of salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.
  4. Whisk the egg and vanilla extract together, then add to the flour mixture. Stir gently until a soft dough forms, being careful not to overwork it.
