The key to this dish lies in selecting the right ingredients — fresh, quality produce and flavorful sausage make all the difference. Whenever possible, I choose organic or locally sourced beans and fresh herbs to elevate the dish naturally. The sausage is where I like to experiment: sometimes a spicy chorizo, other times a milder smoked sausage, depending on what Emma and Noah are in the mood for. This flexibility keeps the recipe exciting and family-friendly.
- 1 cup long-grain white rice (or brown rice for a whole grain option)
- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced (chorizo, kielbasa, or your favorite)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups low-sodium chicken broth or vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh cilantro or parsley, chopped (for garnish)
- Optional: pinch of red pepper flakes for heat
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add the sliced sausage and cook until browned and slightly crispy, about 5-7 minutes. Remove sausage and set aside.
- In the same pan, add the diced onion and bell pepper. Sauté until softened, about 4-5 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Add the rice to the pan and toast it lightly by stirring constantly for 1-2 minutes. This step adds a wonderful nutty flavor and helps keep the rice fluffy.
- Pour in the broth, then stir in the black beans, cumin, smoked paprika, salt, and pepper. Return the sausage to the pan and bring everything to a gentle boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes (or according to your rice’s package instructions), until the liquid is absorbed and the rice is tender.
- Remove from heat and let sit covered for 5 minutes to steam. Fluff the rice with a fork, garnish with fresh cilantro or parsley, and serve warm.
