- Begin by making the blueberry swirl. In a small saucepan, combine the blueberries, lemon juice, and honey (if using). Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens, about 8-10 minutes. Let cool completely.
- In a mixing bowl, stir the Greek yogurt and vanilla extract together until smooth and creamy.
- Line a baking sheet with parchment paper or use silicone molds for easy removal later.
- Spoon a dollop of yogurt into each mold or onto the parchment paper, then add a small spoonful of blueberry mixture on top.
- Using a toothpick or skewer, gently swirl the blueberry jam into the yogurt for a marbled effect—don’t overmix; you want those beautiful swirls to show.
- Place the tray or molds in the freezer for at least 3-4 hours, or until completely solid.
- Once frozen, pop the bites out and store them in an airtight container in the freezer until ready to enjoy.
