The key to this dish lies in selecting the right ingredients that bring freshness and depth without complicating the process. I always recommend using day-old rice because it fries better and avoids the mushy texture fresh rice can sometimes have. I also like to keep it simple with staples like eggs, soy sauce, and a mix of fresh veggies. Over the years, I’ve learned that using good-quality soy sauce and fresh aromatics really make a difference in flavor. And of course, feel free to swap in your favorite proteins or veggies depending on what’s in your fridge.
- 3 cups cooked jasmine rice (preferably chilled overnight)
- 2 large eggs, beaten
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, corn, or bell peppers)
- 3 tablespoons soy sauce (low sodium preferred)
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil or neutral cooking oil
- 2 green onions, sliced
- Optional: cooked bacon, sausage, or tofu for added protein
- Freshly ground black pepper, to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the beaten eggs and scramble gently until cooked through but still soft. Remove eggs from the pan and set aside.
- Add the remaining tablespoon of oil to the pan. Toss in the chopped onion and sauté for about 2 minutes until translucent and fragrant.
- Stir in the minced garlic and cook for an additional 30 seconds, making sure it doesn’t burn.
- Add the mixed vegetables and cook for 3-4 minutes until they are tender but still bright and crisp.
- Increase the heat to high and add the chilled rice. Use a spatula to break up any clumps and stir-fry for 5-6 minutes, allowing the rice to heat through and start to brown slightly.
- Pour the soy sauce and sesame oil evenly over the rice. Toss everything together to coat the rice and veggies thoroughly.
- Return the scrambled eggs to the pan, mixing gently to combine without breaking up the eggs too much.
- Season with freshly ground black pepper to taste. Add the sliced green onions and any optional proteins like cooked bacon or tofu at this stage.
- Give the rice one final toss and serve hot.
