  • 2 boneless, skinless chicken breasts, sliced into strips
  • 8 ounces penne pasta (or your favorite short pasta)
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente. Drain and set aside.
  2. While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add the chicken strips, seasoning with salt and pepper. Cook for 5-6 minutes, turning occasionally, until golden and cooked through. Remove chicken and set aside.
