I always opt for fresh, crunchy romaine lettuce and the freshest shrimp I can find — nothing beats that sweet ocean flavor paired with creamy dressing. When it comes to the Caesar dressing, homemade or a good-quality store-bought one works equally well, especially when time is tight. And don’t forget the wraps — soft flour tortillas hold everything together just right, soft yet sturdy enough for the filling.
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper, to taste
- 4 large flour tortillas or wraps
- 3 cups chopped romaine lettuce
- 1/2 cup Caesar dressing (homemade or store-bought)
- 1/4 cup grated Parmesan cheese
- Optional: croutons or toasted bread crumbs for extra crunch
- Fresh lemon wedges for squeezing
If you’re looking to switch things up, baby kale or mixed greens can substitute the romaine, and whole wheat or spinach wraps add a nice twist while keeping it nutritious.
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Toss the shrimp with smoked paprika, salt, and pepper. Add them to the skillet and cook for 2-3 minutes on each side, until pink and opaque. Remove from heat and set aside.
- Warm the tortillas briefly in a dry pan or microwave to make them flexible and easier to roll.
- In a large bowl, toss chopped romaine with Caesar dressing until evenly coated. Add grated Parmesan cheese and gently mix.
- Lay a tortilla flat and add a generous handful of dressed lettuce down the center. Top with cooked shrimp and, if using, sprinkle croutons or toasted bread crumbs for crunch.
- Squeeze a little fresh lemon juice over the filling for brightness.
- Fold the sides of the tortilla over the filling, then roll tightly from the bottom up to form a wrap.
- Serve immediately, or wrap in parchment paper for an easy, portable meal.
