The key to this dish lies in selecting fresh seafood and quality ingredients that let the simple flavors shine. I always look for wild-caught salmon and fresh shrimp—there’s just no substitute for that freshness. When shopping for Cajun seasoning, I prefer to make my own blend at home, using pantry staples to control the heat and flavor exactly how my family likes it.
- 1 lb wild-caught salmon fillets, skin removed and cut into 2-inch pieces
- 1/2 lb large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning (store-bought or homemade)
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the salmon and shrimp dry with paper towels. Toss them gently with the Cajun seasoning, making sure each piece is evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Add salmon pieces and cook for about 3 minutes per side until just cooked through. Remove and set aside.
- In the same skillet, add 1 tablespoon of butter and sauté the shrimp for 2-3 minutes per side until pink and opaque. Remove and set aside with the salmon.
- Reduce heat to medium and add the remaining butter. Stir in the minced garlic and cook gently for 1 minute until fragrant, being careful not to burn it.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.
- Return the cooked salmon and shrimp to the skillet, spooning the sauce over to coat. Let everything warm together for 2 minutes so the flavors meld.
- Garnish with freshly chopped parsley before serving. Enjoy immediately with your favorite sides!
