- 8 slices thick-cut brioche or challah bread
- 1 cup whole milk ricotta cheese

- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 4 large eggs
- 1 cup whole milk
- 2 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon

Instructions
- In a medium bowl, combine the ricotta, mascarpone (if using), powdered sugar, vanilla extract, and lemon zest. Stir until smooth and creamy. Set aside.
- Using a serrated knife, carefully cut a pocket into each slice of bread by slicing horizontally through the middle, creating a cavity without cutting all the way through.
- Fill each bread pocket generously with the ricotta mixture. Be gentle to avoid tearing the bread.
- In a shallow dish, whisk together eggs, whole milk, granulated sugar, and cinnamon. This will be your custard mixture.
- Heat a large skillet or griddle over medium heat and add a little butter or oil to coat the surface.
- Dip each stuffed bread slice into the custard mixture, allowing it to soak for about 20 seconds on each side. Don’t oversoak to prevent sogginess.
- Place the soaked slices onto the hot skillet and cook until golden brown and crisp, about 3-4 minutes per side. Adjust heat as needed to avoid burning.
- Once cooked, transfer to a plate and dust with powdered sugar. Sprinkle mini chocolate chips on top if desired for a fun twist.
