- 4 boneless, skinless chicken breasts
- 8 oz fresh mozzarella, sliced
- 2 large ripe tomatoes, sliced
- 1 cup fresh basil leaves
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 1 teaspoon dried Italian seasoning (optional)
- Balsamic glaze, for drizzling (optional but highly recommended)

- Preheat your oven to 375°F (190°C). This moderate heat helps cook the chicken evenly without drying it out.
- Using a sharp knife, carefully create a pocket in each chicken breast by slicing horizontally, making sure not to cut all the way through.
- Season both sides of the chicken breasts with salt, pepper, and Italian seasoning if using. This simple seasoning enhances the natural flavors.
- Stuff each chicken breast with slices of mozzarella, tomato, and fresh basil leaves. I like to layer the basil directly on the cheese to keep it moist and aromatic.
- Secure each stuffed breast with toothpicks if needed to keep the filling inside during cooking.
- Heat olive oil in an oven-safe skillet over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Place the stuffed chicken breasts in the skillet and sear for 3-4 minutes on each side until golden brown. This step locks in the juices and adds beautiful color.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove the toothpicks carefully, drizzle with balsamic glaze if you like, and let the chicken rest for a few minutes before serving. This helps the juices redistribute and keeps the chicken tender.
