  • 2 tablespoons honey or brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 cups chicken broth (preferably homemade or low sodium)
  • 1 tablespoon vegetable oil or sesame oil
  • 1 teaspoon rice vinegar (optional, for brightness)
  • Salt and pepper, to taste
  • 2 cups cooked jasmine or basmati rice
  • Chopped scallions and sesame seeds for garnish (optional)

Instructions

  1. Heat the oil in a large skillet or saucepan over medium-high heat. Add the chicken pieces, seasoning lightly with salt and pepper, and cook until browned on all sides, about 5-7 minutes.
  2. Lower the heat to medium, add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant but not burnt.
  3. Stir in the soy sauce and honey (or brown sugar), coating the chicken evenly. Let the mixture simmer gently for 3-4 minutes until the sauce starts to caramelise and thicken slightly.
  4. Pour in the chicken broth and rice vinegar (if using). Bring to a gentle boil, then reduce the heat to low and let it simmer for 10-12 minutes, allowing the chicken to cook through and the flavors to meld.
