The key to this dish lies in selecting fresh, quality ingredients that let the flavors shine naturally. I always reach for fresh ginger and garlic because their aroma and zest make the broth truly special. For the chicken, boneless thighs work beautifully — they stay tender and soak up the caramelised soy sauce so well. When it comes to soy sauce, I prefer using a naturally brewed, low-sodium version to keep the saltiness balanced. And of course, a good-quality jasmine or basmati rice rounds out the meal perfectly.
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 3 tablespoons soy sauce (low sodium preferred)
- 2 tablespoons honey or brown sugar
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 cups chicken broth (preferably homemade or low sodium)
- 1 tablespoon vegetable oil or sesame oil
- 1 teaspoon rice vinegar (optional, for brightness)
- Salt and pepper, to taste
- 2 cups cooked jasmine or basmati rice
- Chopped scallions and sesame seeds for garnish (optional)
Instructions
- Heat the oil in a large skillet or saucepan over medium-high heat. Add the chicken pieces, seasoning lightly with salt and pepper, and cook until browned on all sides, about 5-7 minutes.
- Lower the heat to medium, add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant but not burnt.
- Stir in the soy sauce and honey (or brown sugar), coating the chicken evenly. Let the mixture simmer gently for 3-4 minutes until the sauce starts to caramelise and thicken slightly.
- Pour in the chicken broth and rice vinegar (if using). Bring to a gentle boil, then reduce the heat to low and let it simmer for 10-12 minutes, allowing the chicken to cook through and the flavors to meld.
- While the broth simmers, prepare the rice according to package instructions or your preferred method.
- Once the chicken is tender and the broth is flavorful, taste and adjust seasoning with additional salt or pepper if needed.
- Serve the caramelised soy chicken and broth over warm rice, garnished with chopped scallions and a sprinkle of sesame seeds if desired.
