- 3 1/2 cups all-purpose flour
- 1 packet active dry yeast (2 1/4 teaspoons)
- 1 1/2 cups warm water (about 110°F)
- 2 tablespoons granulated sugar

- 4 tablespoons unsalted butter, melted
- 8 ounces shredded mozzarella cheese
- 4 ounces shredded sharp cheddar cheese
- 10 cups water (for boiling)
- 2/3 cup baking soda (for boiling)
- 1 large egg, beaten (for egg wash)
- Coarse sea salt, for sprinkling

- In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy — this signals the yeast is active and ready.
- In a large bowl, mix the flour and salt. Add the melted butter and the yeast mixture, stirring together until the dough starts to come together.
- Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. I find kneading with my kids nearby is a great way to make it fun and interactive!
- Place the dough in a lightly oiled bowl, cover with a clean towel, and let it rise in a warm spot for about 1 hour, or until doubled in size.
- Preheat your oven to 450°F (230°C) and line baking sheets with parchment paper.
- Divide the dough into 8 equal pieces. Roll each piece into a 12-inch rope. Flatten the rope slightly and place a generous line of the cheese mixture down the center.
- Fold the dough over the cheese, sealing the edges well to prevent leaks during baking. Shape into a traditional pretzel form or a simple knot.
- In a large pot, bring 10 cups of water and the baking soda to a rolling boil. Carefully drop each pretzel in for 30 seconds, then remove with a slotted spoon and place on baking sheets.
- Brush each pretzel with the beaten egg and sprinkle with coarse salt.
