  • 8 lasagna noodles
  • 2 cups cooked chicken breast, shredded or chopped
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes for a little heat

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish to prevent sticking.
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  5. In a large bowl, combine cooked chicken, sautéed spinach and garlic, 1 cup of Alfredo sauce, 1 cup mozzarella, and half the Parmesan. Season with salt, pepper, and red pepper flakes if using.
  6. Spread a thin layer of Alfredo sauce over each noodle. Spoon the chicken mixture evenly over the noodles, then carefully roll each one up.
  7. Place the rolled noodles seam side down into the prepared baking dish. Pour the remaining Alfredo sauce over the rolls and sprinkle with the remaining mozzarella and Parmesan cheese.
  8. Bake uncovered for 25-30 minutes, or until the cheese is bubbly and golden on top.
  9. Let the rolls rest for 5 minutes before serving. This helps the sauce thicken slightly and makes them easier to plate.
