The key to this dish lies in selecting the right ingredients that balance flavor and texture. I always reach for freshly shredded cheese and homemade mashed potatoes when possible—it truly makes all the difference. When I’m pressed for time, using leftover mashed potatoes works beautifully too, which is a great way to reduce waste and transform yesterday’s dinner into today’s delight.
- 2 cups mashed potatoes (preferably homemade or leftover)
- 1 cup shredded cheddar cheese (sharp or mild, depending on your family’s preference)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg, lightly beaten
- 1/2 cup all-purpose flour (plus extra for dusting)
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh chives or green onions (optional for a fresh touch)
- Vegetable oil or olive oil for frying
Instructions
- Preheat your oven to 375°F and line a baking sheet with parchment paper if you plan to bake, or prepare a deep skillet with vegetable oil for frying.
- In a large bowl, combine mashed potatoes, cheddar, mozzarella, Parmesan, and the beaten egg. Mix gently until everything is well incorporated.
- Add flour, garlic powder, salt, pepper, and chopped chives (if using). Stir until the mixture holds together but isn’t too sticky. Add a little more flour if needed.
- Using your hands or a small cookie scoop, form the mixture into bite-sized puffs—about 1 to 1.5 inches in diameter.
- If frying: heat oil to 350°F in a deep skillet. Fry the puff bites in batches for 3-4 minutes until golden and crisp, turning occasionally. Drain on paper towels.
- If baking: place puffs on the prepared baking sheet and lightly brush with oil. Bake for 20-25 minutes until golden and crisp, flipping halfway through.
- Let the puffs cool slightly before serving. They’re best enjoyed warm with a dip or on their own!
