  • 2 tablespoons olive oil or vegetable oil
  • 3 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth (homemade or low-sodium store-bought)
  • 1/2 cup heavy cream or whole milk
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides. This simple step enhances the flavor and ensures every bite is well-seasoned.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and sear for about 5-6 minutes per side until golden brown and just cooked through. Remove the chicken from the pan and set aside on a plate, tented with foil to keep warm.
  3. Lower the heat to medium and melt the butter in the same skillet. Add the chopped onion and sauté until translucent and soft, about 4 minutes.
  4. Stir in the minced garlic and cook for an additional 30 seconds until fragrant. Be careful not to burn the garlic as it can turn bitter.
  5. Sprinkle the flour over the onion and garlic mixture, stirring constantly to create a roux. Cook for 2-3 minutes to remove the raw flour taste; you’ll notice the mixture thickening slightly.
  6. Slowly whisk in the chicken broth, scraping the bottom of the pan to release all those delicious browned bits. Continue whisking until the gravy is smooth and starts to thicken, about 5 minutes.
