Ingredients
Scale
The key to this dish lies in selecting the right ingredients, especially fresh and ripe avocado and quality chicken. I’ve learned that starting with simple, trusted ingredients makes a huge difference—something my mom taught me growing up in that lively kitchen where fresh flavors always took center stage. When possible, I choose organic chicken breasts and ripe Hass avocados for their creamy texture and buttery flavor.
- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 ripe Hass avocado
- 4 slices of your favorite sandwich bread (sourdough works beautifully)
- 4 slices sharp cheddar or Monterey Jack cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- Optional: 1 tablespoon mayonnaise or Greek yogurt for extra creaminess
- Optional: Fresh baby spinach or arugula for a peppery crunch
Instructions
- Start by heating olive oil in a skillet over medium heat. While it warms, season the chicken breasts with garlic powder, salt, and pepper.
- Cook the chicken breasts for about 5-6 minutes per side until golden brown and cooked through. A meat thermometer should read 165°F for perfect doneness.
- Once cooked, let the chicken rest for a few minutes, then slice it thinly against the grain for tenderness.
- Meanwhile, toast your bread lightly—this helps it hold up under the creamy avocado and melted cheese.
- Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it gently with a fork; if you like, stir in mayonnaise or Greek yogurt for extra creaminess. Season with a pinch of salt and pepper.
- Spread a generous layer of the avocado mash onto each slice of toasted bread.
- Layer the sliced chicken evenly over two of the avocado-covered slices, then top each with a slice of cheese and fresh greens if using.
- Place the remaining avocado-topped bread slices on top to form sandwiches. Return them to the skillet or use a panini press and cook over medium heat until the cheese melts and the bread is golden and crisp, about 2-3 minutes per side.
- Slice in half and serve warm—perfect for dipping into a side of your favorite sauce or simply enjoying as is!
