  • 1 lb boneless, skinless chicken breasts or thighs
  • 4 cups peeled and diced Yukon Gold potatoes
  • 1 cup broccoli florets

  • 1/2 cup whole milk or cream
  • 2 cloves garlic, minced

Instructions

  1. Start by peeling and chopping the potatoes into even chunks. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.
  2. While the potatoes cook, heat olive oil in a large skillet over medium heat. Season the chicken with salt, pepper, and thyme. Cook the chicken for 6-7 minutes per side until golden brown and cooked through. Remove from skillet and let rest.
