The key to this dish lies in selecting the right ingredients—fresh, simple, and high quality. I always opt for boneless, skinless chicken breasts for tenderness and ease, and I never skimp on the Parmesan cheese; freshly grated makes a world of difference in the sauce’s flavor. The dough is best when made from scratch or a good-quality store-bought puff pastry, depending on your time. I’ve found that using real butter in the sauce adds that silky richness that makes it so comforting. If you’re looking to tweak it, shredded rotisserie chicken works wonderfully too, saving prep time without sacrificing taste.

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 sheet puff pastry or homemade dough (about 8 oz)
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried Italian herbs (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Season the chicken breasts with salt, pepper, and Italian herbs. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden on both sides, about 3-4 minutes per side. Remove from heat and let cool slightly.
  3. Roll out your dough or puff pastry on a lightly floured surface and cut into equal-sized squares, about 4×4 inches.
  4. Slice the seared chicken into bite-sized pieces and place a few pieces in the center of each dough square. Fold the dough over to form a neat pillow and seal edges with a fork.
  5. Place the chicken pillows on the baking sheet and bake for 18-20 minutes, or until the pastry is golden and puffed.
  6. While the pillows bake, prepare the creamy Parmesan sauce. In a saucepan, melt butter over medium heat. Add garlic and sauté until fragrant, about 30 seconds.
  7. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese gradually until melted and the sauce thickens, about 3-5 minutes. Season with salt and pepper to taste.
  8. Once the chicken pillows are out of the oven, spoon the warm Parmesan sauce over them and garnish with fresh parsley if using. Serve immediately.
