- 1 tablespoon olive oil

- 1 cup cooked jasmine or basmati rice
- 1 cup shredded red cabbage

- For the Coconut Lime Drizzle:
- 1/3 cup coconut milk (full fat for creaminess)
- Juice and zest of 1 lime

Instructions
- Start by seasoning the chicken pieces with chili powder, smoked paprika, cayenne, salt, and pepper. Toss well to coat evenly.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken and cook for about 5-7 minutes, stirring occasionally, until cooked through and slightly charred on the edges.
- While the chicken cooks, whisk together the coconut milk, lime juice and zest, honey, ginger, and garlic in a small bowl. Set aside to let the flavors meld.
- Assemble your bowls by layering the cooked rice at the bottom, then topping with the chili chicken, shredded cabbage, carrot, and cucumber.
