- 2 boneless ribeye steaks (about 1-inch thick)

- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Remove the steaks from the fridge and let them sit at room temperature for about 30 minutes. This helps them cook more evenly.
- Season both sides of the steaks generously with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. When the oil is hot and shimmering, add the steaks.
- Cook the steaks for about 4-5 minutes on each side, or until they reach your desired level of doneness. Transfer to a plate and cover loosely with foil to rest.
- In a small saucepan, melt the butter over low heat. Stir in the Dijon mustard, lemon juice, garlic powder, smoked paprika, and cayenne pepper until well combined.
- Remove the saucepan from heat and stir in the chopped parsley.
- Serve the steaks hot, topped generously with the cowboy butter sauce.
