- 12 oz smoked sausage, sliced (or chicken/turkey sausage for a lighter option)
- 8 oz penne or your favorite pasta
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 ½ teaspoons Cajun seasoning (adjust to taste)
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned and slightly crisp, about 5-6 minutes. Remove sausage from skillet and set aside.
- In the same skillet, add the chopped onion and diced red bell pepper. Sauté for 4-5 minutes until softened and fragrant.
- Add minced garlic and Cajun seasoning to the skillet. Stir continuously for 1 minute to toast the spices and release their aroma.
- Pour in the chicken broth and heavy cream, stirring to combine. Let the sauce simmer gently over low heat for about 5 minutes until slightly thickened.
- Return the cooked sausage to the skillet. Mix in the Parmesan cheese and season with salt and pepper to taste.
- Add the cooked pasta to the skillet, tossing everything together until the pasta is well coated with the creamy sauce.
