- 12 ounces penne or rigatoni pasta
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 2 ½ cups whole milk
- 1 cup heavy cream
- 1 ½ cups freshly grated Parmesan cheese
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ½ teaspoon dried Italian herbs or fresh thyme
- 1 cup shredded mozzarella cheese
- Optional: 1 cup cooked chicken or sautéed mushrooms for added protein
If you want a lighter twist, substitute half the cream with more milk. For a vegetarian version, simply skip the chicken or mushrooms.
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook the pasta in salted boiling water until al dente, about 8 minutes. Drain and set aside—don’t overcook, as it will continue baking later.
- In a large saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.
- Whisk in the flour and cook for 1-2 minutes to form a roux, stirring constantly to avoid lumps.
- Gradually pour in the milk and cream while whisking continuously. Cook until the sauce thickens and coats the back of a spoon, about 5 minutes.
- Remove from heat and stir in the Parmesan cheese, salt, pepper, and Italian herbs. Taste and adjust seasoning.
- Combine the cooked pasta and cheese sauce in a large bowl. If using, fold in cooked chicken or mushrooms at this point.
- Transfer the mixture into the prepared baking dish and top evenly with shredded mozzarella.
- Bake uncovered for 20-25 minutes, until the top is golden and bubbly.
- Let it rest for 5 minutes before serving to allow the sauce to set slightly.
