- 1 pound large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 3 tablespoons unsalted butter
- 1 cup heavy cream (or half-and-half for a lighter option)
- 1 tablespoon olive oil
- 1/4 cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- 1 tablespoon fresh parsley, chopped (optional)
- 2 pounds Yukon Gold potatoes, peeled and quartered
- 1/2 cup whole milk or cream (for mashed potatoes)
- 2 tablespoons unsalted butter (for mashed potatoes)
Instructions
- Start by boiling the peeled and quartered Yukon Gold potatoes in salted water until fork-tender, about 15-20 minutes.
- While the potatoes cook, heat olive oil and 1 tablespoon butter in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.
- Increase the heat to medium-high, add the shrimp, and season with salt and pepper. Cook for 2-3 minutes on each side until the shrimp are pink and opaque.
- Lower the heat to medium and pour in the heavy cream, stirring to combine with the garlic butter.
- Sprinkle in the Parmesan cheese and let the sauce simmer gently for 2-3 minutes until it thickens slightly.
- Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.
- Serve the creamy garlic shrimp over a generous bed of mashed potatoes, topping with fresh parsley if desired.
