- 12 ounces spaghetti or your favorite pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced

- 1/2 cup half-and-half or light cream

Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned—this is key to avoid bitterness.
- Pour in the crushed or fresh tomatoes, stir in red pepper flakes if using, and let the sauce simmer gently for 8-10 minutes. This allows the flavors to meld and the sauce to thicken slightly.
- Lower the heat and stir in the half-and-half or light cream. Let it warm through for about 2 minutes, stirring occasionally to combine everything smoothly.
- Season with salt and freshly ground black pepper to taste. If the sauce feels too thick, add a splash of reserved pasta water to loosen it up.
- Toss the cooked pasta into the sauce, mixing well to coat every strand. Sprinkle the Parmesan cheese on top and gently stir until melted and creamy.
