  • 12 ounces fettuccine pasta
  • 1 pound Italian sausage (mild or spicy, depending on preference)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth or white wine
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Substitutions: For a lighter version, you can swap heavy cream for half-and-half or a mixture of milk and cream cheese. If you prefer gluten-free, rice or corn-based fettuccine works well too.

Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccine until al dente, about 10-12 minutes. Drain and set aside, reserving 1/2 cup of pasta water.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 6-8 minutes.
  3. Add the chopped onion and sauté until softened, about 3 minutes. Stir in minced garlic and cook for another 30 seconds until fragrant.
  4. Pour in the chicken broth or white wine, scraping any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes to reduce slightly.
  5. Lower the heat and stir in the heavy cream and Parmesan cheese. Let the sauce simmer gently until it thickens, about 4-5 minutes. Season with salt and pepper to taste.
  6. Add the cooked fettuccine to the skillet and toss to coat evenly with the sauce. If the sauce feels too thick, add reserved pasta water a little at a time until you reach your desired consistency.
