The key to this dish lies in selecting the right ingredients. I always reach for the freshest potatoes I can find — Yukon Golds are my go-to because they’re creamy and hold their shape beautifully. - 4 cups peeled and diced Yukon Gold potatoes
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken broth (low sodium preferred)
- 1 cup heavy cream
- 4 tablespoons unsalted butter
- 1/2 cup shredded sharp cheddar cheese (optional)
- 2 tablespoons all-purpose flour
- Salt and freshly ground black pepper, to taste
- 2 green onions, thinly sliced (for garnish)
- Bacon bits or smoked paprika (optional, for extra flavor)
Instructions
- Start by melting the butter in a large pot over medium heat. Once melted, add the chopped onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Sprinkle the flour over the onions and garlic, stirring constantly to form a roux. This step is crucial for thickening the soup, so cook the flour for about 2 minutes but don’t let it brown.
- Slowly pour in the chicken broth while whisking to avoid lumps. Add the diced potatoes, bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Once the potatoes are soft, use an immersion blender to partially blend the soup, leaving some chunks for texture. If you don’t have an immersion blender, carefully transfer half the soup to a blender, puree, then stir back in.
- Stir in the heavy cream and season with salt and pepper to taste. Let the soup heat through gently for another 5 minutes, but don’t let it boil to keep the cream from curdling.
- For an extra touch, stir in the shredded cheddar cheese until melted and smooth.
- Ladle the soup into bowls and garnish with green onions and optional bacon bits or a sprinkle of smoked paprika for a smoky finish.
