- 1 pound thinly sliced sirloin or ribeye steak
- 2 tablespoons olive oil or butter
- 1 medium yellow onion, thinly sliced
- 2 cups sliced bell peppers (a mix of red and green)
- 3 cloves garlic, minced
- 4 cups beef broth (low sodium preferred)
- 1 cup heavy cream
- 1 cup shredded provolone cheese (or Swiss as a substitute)
- 1 cup shredded mozzarella cheese
- 2 tablespoons all-purpose flour
- Salt and freshly ground black pepper, to taste
- Optional: 1 teaspoon Worcestershire sauce for depth
Instructions
- Heat olive oil or butter in a large pot over medium-high heat. Add the sliced steak and quickly sear for 2-3 minutes until just browned but not fully cooked. Remove and set aside.
- In the same pot, add the sliced onions and bell peppers. Sauté for about 5-6 minutes until softened and lightly caramelized. Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Sprinkle the flour over the veggies and stir well to coat. This helps thicken the soup later.
- Gradually pour in the beef broth while stirring constantly to avoid lumps. Bring the mixture to a gentle boil, then reduce to a simmer and cook for 10 minutes to thicken slightly.
- Stir in the heavy cream and Worcestershire sauce if using. Return the steak to the pot and let it simmer for another 5 minutes until the steak is cooked through and the soup is creamy and rich.
- Lower the heat and add the shredded provolone and mozzarella, stirring until the cheese melts smoothly into the soup.
- Season with salt and freshly ground black pepper to taste. Serve hot with crusty bread or a side salad for a complete meal.
