- 8 oz cream cheese, softened
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- 4 lasagna noodles, broken into bite-sized pieces
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- Fresh basil or parsley, chopped, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent and fragrant.
- Add the minced garlic and cook for another 1-2 minutes, stirring constantly to prevent burning.
- Pour in the chicken broth and water, then stir in the Italian seasoning and red pepper flakes if using. Bring the mixture to a gentle boil.
- Add the broken lasagna noodles to the pot and cook for 8-10 minutes, stirring occasionally, until the noodles are tender but still slightly firm.
- Reduce the heat to low, then whisk in the softened cream cheese until fully melted and the broth is creamy.
- Stir in the cooked chicken, mozzarella, and Parmesan cheese. Let the soup simmer for 3-5 minutes until the cheese melts and everything is heated through.
- Season with salt and pepper to taste. Garnish with freshly chopped basil or parsley before serving.
