Scale
The key to this dish lies in selecting the right ingredients to build layers of flavor. I always reach for fresh garlic because it makes a noticeable difference in the sauce’s depth. Parmesan cheese is another star—look for a good quality, finely grated kind for that perfect crust. And don’t underestimate the power of fresh herbs if you want to add a little extra brightness! When it comes to chicken, I prefer boneless, skinless breasts for ease and quick cooking, but thighs work beautifully here too if you want something a bit juicier.
- 4 boneless, skinless chicken breasts (about 1.5 pounds total)
- 1 cup grated Parmesan cheese (freshly grated if possible)
- 1 cup panko breadcrumbs
- 2 large eggs
- 2 cloves garlic, minced
- 1/4 cup unsalted butter
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a shallow dish, combine the grated Parmesan cheese and panko breadcrumbs. Season with a pinch of salt and pepper.
- In another bowl, whisk the eggs until smooth.
- Pat the chicken breasts dry with paper towels. This step is key for the coating to stick well and become crispy.
- Dip each chicken breast first into the beaten eggs, then dredge thoroughly in the Parmesan-panko mixture, pressing gently to adhere.
- Heat olive oil in a large skillet over medium heat. Add the coated chicken breasts and cook for about 3 minutes on each side until golden brown.
- Transfer the chicken to the prepared baking sheet and bake for 12-15 minutes until cooked through (internal temperature should reach 165°F).
- While the chicken bakes, melt butter in a small saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Pour in the heavy cream, stirring constantly. Let the sauce simmer gently for 3-5 minutes until it thickens slightly. Season with salt and pepper to taste.
- Serve the chicken topped generously with the rich garlic sauce and sprinkle with fresh parsley if using.
