- 2 large sweet onions (like Vidalia or Walla Walla), thinly sliced into rings
- 1 cup panko breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 large eggs
- Cooking spray or olive oil for baking

Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Lightly spray with cooking spray to prevent sticking.
- Separate the onion slices into individual rings, discarding the very small ones that might fall apart.
- In a shallow bowl, whisk the eggs until smooth and set aside.
- In another bowl, combine the panko breadcrumbs, grated Parmesan, garlic powder, smoked paprika, salt, and black pepper. Mix well so the seasoning is evenly distributed.
- Dip each onion ring first into the egg wash, letting any excess drip off, then dredge thoroughly in the breadcrumb mixture, pressing gently to adhere.
- Place coated rings in a single layer on the prepared baking sheet. Lightly spray the tops with cooking spray to encourage crispness.
- Bake for 15-18 minutes, flipping halfway through, until golden brown and crispy. Keep an eye on them after 12 minutes to avoid burning.
- Remove from oven and let cool for a few minutes before serving to lock in that perfect crunch.
