Ingredients
Scale
The key to this dish lies in selecting the right ingredients that balance freshness and flavor without complexity. I always opt for quality spices and fresh produce to keep the tacos vibrant and satisfyingly wholesome. Over the years, I’ve found that using fresh eggs and a good sharp cheddar really elevates the whole experience. Don’t be afraid to customize the filling based on what you have on hand—this recipe is wonderfully flexible.
- 1 pound breakfast sausage (pork or turkey)
- 1 small onion, finely chopped
- 1 bell pepper, diced (red or green)
- 4 large eggs, lightly beaten
- 1 cup shredded sharp cheddar cheese
- 1/2 cup milk or cream
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- 8 small flour or corn tortillas
- Optional toppings: fresh cilantro, sliced avocado, salsa, sour cream
Instructions
- Start by browning the breakfast sausage in a skillet over medium heat. Break it apart with a spatula until fully cooked and slightly crispy around the edges, about 6-8 minutes. Drain excess fat and transfer the sausage to your slow cooker.
- In the same skillet, sauté the chopped onion and bell pepper until softened and fragrant, about 4 minutes. Add these to the slow cooker with the sausage.
- In a bowl, whisk together the eggs, milk, chili powder, cumin, smoked paprika, salt, and pepper until well combined.
- Pour the egg mixture over the sausage and vegetables in the slow cooker, stirring gently to distribute everything evenly.
- Cover and cook on low for 2 to 3 hours, or until the eggs are fully set but still moist. Avoid overcooking to keep the texture tender.
- Before serving, stir in the shredded cheddar cheese, allowing it to melt through the mixture.
- Warm your tortillas either in a dry skillet or wrapped in a damp towel in the microwave for 30 seconds.
- Spoon the taco filling onto the warm tortillas and add your favorite toppings like cilantro, avocado, or salsa.
