  • 2 pounds boneless, skinless chicken thighs
  • 4 cups low-sodium chicken broth

  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk (or buttermilk for extra tang)
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Place the chicken thighs, chopped onion, carrots, celery, garlic, thyme, parsley, salt, and pepper into the crockpot. Pour the chicken broth over everything, making sure the chicken is mostly submerged.
  2. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  3. Once cooked, carefully remove the chicken and shred it with two forks, then return it to the crockpot.
  4. In a medium bowl, whisk together the flour, baking powder, and salt. Stir in the milk and melted butter until just combined to form a thick batter.
  5. Drop spoonfuls of the dumpling batter onto the surface of the hot broth in the crockpot, spacing them evenly.
