- 2 pounds boneless, skinless chicken thighs
- 4 cups low-sodium chicken broth
- 1 medium onion, finely chopped
- 3 medium carrots, sliced
- 3 celery stalks, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and freshly ground black pepper, to taste
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup milk (or buttermilk for extra tang)
- 2 tablespoons unsalted butter, melted
Instructions
- Place the chicken thighs, chopped onion, carrots, celery, garlic, thyme, parsley, salt, and pepper into the crockpot. Pour the chicken broth over everything, making sure the chicken is mostly submerged.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
- Once cooked, carefully remove the chicken and shred it with two forks, then return it to the crockpot.
- In a medium bowl, whisk together the flour, baking powder, and salt. Stir in the milk and melted butter until just combined to form a thick batter.
- Drop spoonfuls of the dumpling batter onto the surface of the hot broth in the crockpot, spacing them evenly.
- Cover and cook on high for another 30-40 minutes, until the dumplings have puffed up and are cooked through. Avoid lifting the lid during this time to keep the steam trapped.
- Give everything a gentle stir before serving to mix the dumplings and broth together. Taste and adjust seasoning if needed.
