- 4 boneless, skinless chicken breasts

- 1 cup low-sodium chicken broth
- 1/3 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- 1/4 cup capers, drained
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Start by patting the chicken breasts dry and seasoning them with salt and pepper. Dredge each piece lightly in flour, shaking off any excess. This step helps create a delicate coating that thickens the sauce beautifully.
- In a large skillet, heat olive oil over medium-high heat. Sear the chicken breasts for about 2-3 minutes per side until they develop a golden crust. Don’t worry about fully cooking them here; this step locks in flavor and keeps the chicken juicy.
- Transfer the seared chicken to your crockpot. Add minced garlic, chicken broth, lemon juice, lemon zest, and capers on top of the chicken.
- Cover and cook on low for 3-4 hours, or on high for 1.5-2 hours, until the chicken is tender and cooked through.
- Once cooked, carefully remove the chicken and set aside. Stir in butter into the sauce in the crockpot to add richness and a silky finish.
- Serve the chicken topped with the luscious piccata sauce and a sprinkle of fresh parsley. For extra flavor, spoon some sauce over the chicken before serving.
