- 1 pound boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
- 1 cup heavy cream or half-and-half (for a lighter option)
- 1 package (about 9 ounces) cheese tortellini, fresh or frozen
- 2 cups fresh baby spinach, roughly chopped
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 cup shredded Parmesan cheese
- 1 teaspoon dried Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons olive oil or butter
Instructions
- Start by warming olive oil or butter in a pan over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.
- Place the chicken breasts in the slow cooker and pour in the sautéed onion and garlic mixture.
- Add the chicken broth, Italian seasoning, salt, and pepper. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender and fully cooked.
- Remove the chicken breasts, shred them with two forks, and return them to the slow cooker.
- Stir in the heavy cream and Parmesan cheese, then add the tortellini. Cook on high for about 30 minutes more, or until the tortellini is tender and cooked through.
- In the last 5 minutes, fold in the fresh spinach until wilted. Give everything a gentle stir to combine.
- Adjust seasoning with salt and pepper as needed, then serve warm and enjoy the creamy goodness!
