Scale

The key to this dish lies in selecting the right ingredients—fresh, quality produce and good Parmesan cheese make all the difference. Growing up, my mom always emphasized simple ingredients that speak for themselves, and that’s exactly what this recipe celebrates. I love using baby potatoes for their tender skins and creamy centers, and fresh garlic because it gives the dish a bright, aromatic punch.

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved or quartered
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup chicken broth (low sodium preferred)
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

If you’re looking for substitutions, Yukon gold potatoes work beautifully too, and if fresh Parmesan isn’t on hand, a good-quality pre-grated cheese will do in a pinch. For a dairy-free twist, you can omit the cheese and add a splash of coconut cream instead.

Instructions

  1. Start by lightly coating the bottom of your crockpot with olive oil to prevent sticking and add flavor.
  2. Place the halved baby potatoes in the bottom of the crockpot in an even layer.
  3. Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
  4. Arrange the seasoned chicken breasts on top of the potatoes.
  5. In a small bowl, mix the minced garlic, Parmesan cheese, chicken broth, and the remaining olive oil.
  6. Pour this mixture evenly over the chicken and potatoes, making sure the garlic and cheese are well distributed.
  7. Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through and potatoes are soft.
  8. For a little extra texture, I like to uncover during the last 30 minutes and let the top brown slightly—just a personal touch I picked up experimenting with slow cooker meals.
  9. Garnish with fresh parsley before serving for a pop of color and brightness.
