- 1.5 pounds ground beef (or ground turkey for a lighter option)
- 5–6 medium-sized potatoes, thinly sliced (Yukon Gold or Russet work best)
- 1 medium onion, finely chopped
- 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
- 1 can (10.5 oz) condensed cream of mushroom soup (or cream of celery for variation)
- 1/2 cup milk
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon Worcestershire sauce (optional, but adds depth)
- Fresh parsley or chives for garnish (optional)
Instructions
- Start by browning the ground beef in a skillet over medium heat. Break it apart as it cooks and add the minced garlic and chopped onion halfway through to soften and release flavors. Drain excess fat to keep the casserole from getting greasy.
- In a separate bowl, stir together the condensed soup and milk until smooth. This creamy mixture will bind everything perfectly in the crockpot.
- Lightly grease the inside of your crockpot to prevent sticking. Begin layering by placing a single layer of thinly sliced potatoes at the bottom.
- Add a layer of the cooked ground beef and onion mixture over the potatoes.
- Pour a few spoonfuls of the soup and milk mixture evenly over the beef layer.
- Sprinkle a generous layer of shredded cheese on top.
- Repeat the layering process—potatoes, beef, soup mixture, cheese—until all ingredients are used, finishing with a cheese layer on top.
- Cover and cook on low for 6-7 hours, or on high for 3-4 hours. You’ll know it’s ready when the potatoes are tender and the cheese is melted and bubbly.
- Before serving, sprinkle with fresh parsley or chives for a pop of color and freshness.
