  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt, adjust to taste
  • Optional: 1/4 teaspoon crushed red pepper flakes for a little heat

If you can’t find fresh green beans, frozen works well too — just add them a bit later in the cooking process to avoid overcooking. And if kielbasa isn’t your favorite, smoked turkey sausage is a great, leaner substitute.

Instructions

  1. Start by prepping your ingredients: slice the kielbasa, trim and halve the green beans, thinly slice the onion, and mince the garlic.
  2. Heat olive oil in a skillet over medium heat. Add the sliced kielbasa and brown it slightly for 3-4 minutes. This step brings out that smoky flavor I love and adds a nice texture.
  3. Transfer the browned kielbasa to your crockpot. Add the green beans, onion, and garlic on top.
  4. Pour the chicken broth over everything, then sprinkle with smoked paprika, black pepper, salt, and red pepper flakes if using.
  5. Give everything a gentle stir to combine the flavors but leave the ingredients layered to retain texture.
  6. Cover and cook on low for 4-5 hours or on high for 2-3 hours. The green beans should be tender but not mushy — keep an eye on the timing if your crockpot runs hot.
  7. Before serving, taste and adjust seasoning if needed. Sometimes a pinch more salt or pepper makes all the difference.
