Choosing the freshest ingredients is key to making a Dragon Fruit Mojito that’s vibrant and flavorful. Whenever possible, I pick ripe dragon fruits that feel heavy for their size and have a bright, unblemished skin. Fresh mint leaves straight from the garden or a farmer’s market always elevate the drink, and fresh lime juice makes all the difference compared to bottled versions. These simple touches remind me of those early days cooking alongside my mom—how quality ingredients turn everyday moments into lasting memories.
- 1 ripe dragon fruit (about 1 cup of flesh, cubed)
- 10 fresh mint leaves, plus extra for garnish
- 1 lime, juiced (about 2 tablespoons)
- 2 teaspoons granulated sugar or simple syrup
- 2 ounces white rum (optional for a mocktail version)
- 1/2 cup club soda or sparkling water
- Ice cubes
Instructions
- Cut the dragon fruit in half and scoop out the flesh using a spoon. Cube the flesh into bite-sized pieces.
- In a sturdy glass or cocktail shaker, add the mint leaves, lime juice, and sugar (or simple syrup). Gently muddle them together to release the mint’s essential oils without tearing the leaves.
- Add the dragon fruit cubes to the glass and lightly muddle to combine the flavors and slightly crush the fruit.
- If using alcohol, pour in the white rum and stir gently to mix.
- Fill the glass with ice cubes, then top with club soda or sparkling water. Stir carefully to combine, ensuring the mint and fruit remain suspended throughout the drink.
- Garnish with a sprig of fresh mint and a small wedge of lime for a pop of color and aroma.
- Serve immediately and enjoy the refreshing burst of tropical flavor.
