The key to this dish lies in selecting the right ingredients, fresh and simple, just like my mom taught me growing up. I always reach for the freshest spinach and firm, meaty mushrooms because they really boost the flavor and texture. Using quality olive oil and freshly grated Parmesan makes a noticeable difference, too. Over time, I’ve learned that these small choices turn a quick meal into something truly special.
- 8 ounces of pasta (penne, fusilli, or your favorite shape)
- 2 tablespoons olive oil
- 3 cups fresh baby spinach, roughly chopped
- 8 ounces cremini or white mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese, plus extra for serving
- 1/2 cup heavy cream or half-and-half (substitute with coconut cream for dairy-free)
- Salt and freshly ground black pepper, to taste
- Optional: red pepper flakes for a little heat
- Fresh parsley or basil for garnish
Instructions
- Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, usually 8-10 minutes. Reserve ½ cup of pasta water, then drain the rest.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced mushrooms and sauté for about 5-7 minutes, stirring occasionally, until they’re golden and release their moisture.
- Add minced garlic to the mushrooms and cook for another 1-2 minutes until fragrant, careful not to burn it.
- Stir in the chopped spinach and cook until just wilted, about 2-3 minutes.
- Pour in the cream and bring it to a gentle simmer. Let it thicken slightly, about 2 minutes.
- Add the cooked pasta to the skillet, tossing to combine. If the sauce feels too thick, add a splash of the reserved pasta water to loosen it up.
- Stir in the grated Parmesan cheese and season with salt, pepper, and red pepper flakes if using.
- Remove from heat and garnish with fresh herbs before serving immediately.
