  • 8 ounces of pasta (penne, fusilli, or your favorite shape)
  • 2 tablespoons olive oil
  • 3 cups fresh baby spinach, roughly chopped
  • 8 ounces cremini or white mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • 1/2 cup heavy cream or half-and-half (substitute with coconut cream for dairy-free)
  • Salt and freshly ground black pepper, to taste
  • Optional: red pepper flakes for a little heat
  • Fresh parsley or basil for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, usually 8-10 minutes. Reserve ½ cup of pasta water, then drain the rest.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced mushrooms and sauté for about 5-7 minutes, stirring occasionally, until they’re golden and release their moisture.
  3. Add minced garlic to the mushrooms and cook for another 1-2 minutes until fragrant, careful not to burn it.
  4. Stir in the chopped spinach and cook until just wilted, about 2-3 minutes.
  5. Pour in the cream and bring it to a gentle simmer. Let it thicken slightly, about 2 minutes.
  6. Add the cooked pasta to the skillet, tossing to combine. If the sauce feels too thick, add a splash of the reserved pasta water to loosen it up.
  7. Stir in the grated Parmesan cheese and season with salt, pepper, and red pepper flakes if using.
  8. Remove from heat and garnish with fresh herbs before serving immediately.
