Ingredients
The key to this dish lies in selecting ripe, flavorful strawberries and good-quality frozen pineapple chunks. Using fresh, vibrant fruit makes all the difference in taste and texture, and it’s a joy to involve the kids in picking out the ingredients at the market. I like to keep a stash of frozen pineapple in the freezer because it adds that perfect tropical sweetness and creamy texture without any added sugar.
- 2 cups frozen strawberries
- 1 cup frozen pineapple chunks
- 1/2 cup plain Greek yogurt (or dairy-free alternative)
- 2 tablespoons honey or maple syrup (optional, adjust to taste)
- 1 teaspoon fresh lemon juice
- 1/4 cup cold water or coconut water (adjust for consistency)
If you’re dairy-free, swapping Greek yogurt for coconut or almond yogurt works beautifully without sacrificing creaminess. And if your strawberries aren’t quite sweet enough, a little extra honey or maple syrup will do the trick.
Instructions
- Place the frozen strawberries and pineapple chunks in a high-speed blender or food processor.
- Add the Greek yogurt, honey or maple syrup (if using), and fresh lemon juice.
- Pour in the cold water or coconut water to help with blending; start with 1/4 cup and add more if needed.
- Blend on high until smooth and creamy, pausing to scrape down the sides as needed. This usually takes about 1-2 minutes.
- Check the consistency—if it’s too thick, add a splash more water; if too thin, toss in a few more frozen fruit pieces and blend again.
- Scoop the mixture into bowls or cones and serve immediately for the best texture.
A little tip from my kitchen: don’t overblend or it can get too icy. I like to stop blending just as it reaches soft-serve consistency—the perfect balance of creamy and refreshing. It’s a simple joy I’ve shared with my kids countless times.
