- 8 ounces cremini or baby bella mushrooms, sliced
- 2 tablespoons unsalted butter
- 1 small shallot, finely chopped
- 1 garlic clove, minced
- Salt and freshly ground black pepper, to taste
- 4 slices rustic sourdough or country bread
- 4 ounces Swiss cheese, sliced
- 1 tablespoon olive oil or extra butter for grilling
- Optional: fresh thyme or parsley for garnish
Instructions
- Start by melting the butter in a large skillet over medium heat. Add the finely chopped shallot and sauté until fragrant and translucent, about 2 minutes.
- Add the sliced mushrooms, stirring occasionally. Cook until the mushrooms release their moisture and start to brown, around 6-8 minutes. Stir in the minced garlic and cook for another minute.
- Season the mushroom mixture with salt, pepper, and if you like, a pinch of fresh thyme. Remove from heat and set aside.
- Preheat a clean skillet or griddle over medium heat. Lightly brush one side of each slice of bread with olive oil or melted butter.
- Place two slices of bread, oiled side down, on the skillet. Layer each with half the Swiss cheese and then the mushroom mixture. Top with remaining cheese and place the other slice of bread on top, oiled side up.
- Cook for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
- Remove from heat, let cool for a minute, then slice in half and garnish with fresh parsley if desired. Serve warm and enjoy!
