Choosing ripe avocados, crisp lettuce, and ripe tomatoes makes a huge difference in elevating this simple meal. - 1 cup long-grain white rice (or brown rice for a nuttier flavor)
- 1 lb ground beef or ground turkey (or 1 can black beans for a vegetarian option)
- 1 packet taco seasoning mix (or homemade blend: chili powder, cumin, paprika, garlic powder, salt)
- 1 cup shredded cheddar cheese
- 1 cup chopped Romaine lettuce
- 1 medium tomato, diced
- 1 avocado, sliced or diced
- 1/2 cup canned corn, drained (optional)
- 1/4 cup chopped red onion (optional)
- 1/4 cup fresh cilantro, chopped (optional)
- 1 lime, cut into wedges
- Sour cream or Greek yogurt for topping (optional)
Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch. Cook according to package instructions—typically about 15-20 minutes for white rice or longer for brown rice. Fluff with a fork and keep warm.
- While the rice cooks, heat a large skillet over medium heat. Add the ground beef or turkey and cook, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes. If using beans, warm them instead.
- Drain any excess fat from the meat, then sprinkle the taco seasoning evenly over the meat. Add about 1/4 cup water and stir. Let it simmer gently for 3-4 minutes until the sauce thickens and coats the meat well.
- Prepare your toppings while the meat simmers: chop lettuce, dice tomatoes and avocado, and slice lime wedges.
- To assemble, start with a base of rice in each bowl. Top with the seasoned meat or beans, then add shredded cheese, lettuce, tomato, corn, onion, avocado, and cilantro as you like.
- Squeeze fresh lime juice over the top and add a dollop of sour cream or Greek yogurt if desired. Serve immediately and enjoy!
