- 3 large yellow onions, thinly sliced

- 1 cup shredded Gruyère or Swiss cheese
- Optional: 1 tablespoon balsamic vinegar for added depth
Instructions
- Heat the butter and olive oil in a large skillet or Dutch oven over medium heat.
- Add the sliced onions and a pinch of salt, then cook slowly, stirring frequently, for about 30-40 minutes until the onions are deeply caramelized and golden brown. Patience here is key—this is where all the magic happens.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the rinsed rice to the pan, stirring to coat the grains in the buttery onion mixture for about 2 minutes. This helps the rice absorb flavors.
- Pour in the beef broth and add the thyme. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and liquid is absorbed.
- If using, stir in the balsamic vinegar at this stage to enhance the richness.
- Season with salt and pepper to taste.
- Preheat your oven broiler. Transfer the rice mixture to an oven-safe dish if your skillet isn’t ovenproof.
- Sprinkle the shredded Gruyère evenly on top and broil for 3-5 minutes until the cheese is melted and bubbling with a few golden spots.
- Remove carefully from the oven and let it rest for a few minutes before serving.
