  • 1 cup fresh strawberries, sliced thinly
  • 2 eggs
  • 1/4 cup milk
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • Optional: powdered sugar or maple syrup, for serving

Instructions

  1. In a small bowl, mix softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  2. Take four slices of bread and spread a generous layer of the cream cheese mixture on each.
  3. Top the cream cheese with sliced strawberries, distributing evenly.
  4. Place the remaining four bread slices on top to form sandwiches, pressing gently to seal.
  5. In a shallow bowl, beat the eggs with milk until combined.
  6. Dip each sandwich into the egg mixture, making sure both sides are well coated.
  7. Press the dipped sandwich into the panko breadcrumbs, coating thoroughly on all sides.
  8. Heat about 1 inch of vegetable oil in a heavy skillet over medium heat until hot but not smoking (around 350°F if using a thermometer).
  9. Fry each sandwich for 2-3 minutes per side, or until golden brown and crispy. Be careful not to overcrowd the pan.
