- 4 large bell peppers, halved and seeds removed
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped
- Juice of half a lemon
If you’re short on shrimp, chicken makes a delightful alternative. And for a hint of extra heat, a pinch of red pepper flakes can be added.
Instructions
- Preheat your oven to 375°F (190°C). Arrange the pepper halves on a baking sheet, cut side up.
- In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet. Sprinkle with paprika, salt, and pepper, then cook until pink and opaque, around 3-4 minutes.
- Stir in lemon juice and parsley, then remove from heat.
- Spoon the shrimp mixture into each pepper half, dividing it evenly.
- Bake the stuffed peppers in the preheated oven for 20-25 minutes until the peppers are tender.
- Garnish with additional parsley before serving.
