If you don’t have fresh herbs on hand, dried rosemary and thyme will work fine, but I encourage you to try fresh whenever possible—it really makes a difference. And if olive oil isn’t your favorite, avocado oil is a great substitute with a mild flavor and high smoke point.
Instructions
- Preheat your oven to 425°F (220°C). This high heat is key to getting those crispy edges we all love.
- Wash and cut the potatoes into even 1-inch pieces to ensure they cook uniformly. I always pat them dry with a towel to remove excess moisture—this helps with crispiness.
- In a large mixing bowl, toss the potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper. Make sure each piece is well-coated; this step infuses the potatoes with flavor and helps them roast evenly.
- Spread the potatoes out in a single layer on a baking sheet lined with parchment paper or a silicone mat. Overcrowding the pan can cause steaming instead of roasting, so give them plenty of room.
- Roast in the preheated oven for 25-30 minutes, flipping the potatoes halfway through. Look for a golden-brown color and crispy edges—that’s your cue they’re ready.
- Remove from oven, sprinkle with fresh parsley, and give them one last gentle toss.
- Serve immediately for the best texture and flavor. I find these are irresistible straight from the oven, but they also hold up well if you need to keep them warm for a few minutes.
