- 2 slices of sourdough or rustic white bread
- 1/2 cup fresh blueberries, washed and patted dry
- 2–3 ounces brie cheese, sliced (can substitute with havarti or mozzarella)
- 1 tablespoon unsalted butter, softened
- 1 teaspoon honey (optional, for a touch of sweetness)
- Pinch of freshly ground black pepper (optional)
- Handful of baby spinach or arugula (optional for extra greens)
Instructions
- Start by spreading the softened butter evenly on one side of each bread slice. This will help achieve that golden, crispy crust we all love.
- Place one slice of bread, buttered side down, in a preheated skillet over medium heat. I like to use a cast iron pan for even heat distribution.
- Layer the cheese slices evenly on the bread in the pan. If you’re using brie, be generous—it melts beautifully and adds creaminess.
- Scatter the fresh blueberries over the cheese. Add a pinch of black pepper if you want a subtle contrast to the sweetness.
- If using, drizzle a little honey on top of the blueberries for that extra hint of sweetness.
- Add baby spinach or arugula if you want a fresh, peppery bite in your sandwich.
- Top with the second slice of bread, buttered side up. Press down gently with a spatula.
- Cook for about 3-4 minutes until the bottom is golden brown. Carefully flip the sandwich and cook another 3-4 minutes on the other side, or until the cheese is melted and bread is crispy.
- Remove from heat and let it rest for a minute before slicing. This little pause helps the cheese set just enough so it doesn’t ooze out immediately.
