- 1 tablespoon olive oil

- Slice the ciabatta loaf horizontally, creating a top and bottom half. Lightly toast the bread in a preheated oven at 350°F for about 5 minutes until the crust is crisp but the interior remains soft. This step adds a lovely texture that holds up to the fillings.
- In a small bowl, mix the mayonnaise and Dijon mustard until well combined. Spread this mixture evenly over both halves of the ciabatta. The tangy spread adds moisture and a subtle kick that ties everything together.
- Layer the bottom half with fresh spinach or arugula. This adds a peppery freshness and a nice contrast to the savory meat and cheese.
- Arrange the roasted turkey slices evenly over the greens, followed by the provolone cheese. If you’re adding avocado or roasted red peppers, layer them now.
- Top with tomato slices, seasoning lightly with salt and pepper to enhance their natural sweetness.
- Drizzle the olive oil over the tomato and close the sandwich with the top half of the ciabatta.
